leftovers

The party was great. Wow, and all of your comments... I felt like I had my own personal little cheering section with me on Friday! Thank you for that.

We had so much food at the party, almost too much. Thinking that it would be just the opposite, I whipped up a few things at the last minute. We didn't even get to my favorite dessert, Gooey Butter Cake:

The whole thing was intact until Saturday a.m., when I started in on the interior. I've been working away at it little by little, as you can see. The good thing about this dessert is that it is very rich. So even if you think you can eat the whole pan, you can't. Still, I might have to send the rest in with my husband to work today. The party is indeed over.

Anyway, if you're a southerner, you may already know and love this dessert. If not, I highly encourage you to throw out worries or cares about cholesterol and calories and make this for yourself (and some special friends) very soon. It's delish!

Gooey Butter Cake

Mix and spread in a (lightly greased) 9x13 pan:
1 yellow cake mix
2 eggs
1 stick of butter
1 teaspoon vanilla

Top with (mixed together)

1 8-oz. package cream cheese
2 eggs
1 16-oz. box powdered sugar (reserve a little for sprinkling on top of cake after baking)

Bake 35-40 minutes at 350 until lightly golden. Center will be soft and (of course) a little gooey. Sprinkle a little powdered sugar on top.

Oh, yum! I always start in the corners where it's a little crunchy. I got such a laugh at the missing middle. Thank goodness I just finished dinner so I won't go raid the sugar canister.
